At Easter, the classics are always a hit, and no offering is complete without Carrot Cake, with its delicious tang of cream cheese frosting, it makes the perfect pairing with coffee. We also know that the ‘brown flavours’, including chocolate are perennially popular, and at Easter deserve to be centre stage. Don’t be afraid to stick with your bakery favourites, from cupcakes to cookies and give them a seasonal decorative update, in the form of mini eggs, chocolate carrots and even rabbits! Chocolate has also made its way into the classic Hot Cross Bun, and we’ve seen many retailers get creative with their Hot Cross Bun NPD – from salted caramel and rhubarb and custard to the savoury option – there’s something for everyone. Go Crazy for Pastels!
Springtime means we see a lot more pastel colours being used around Easter celebration cakes – from light pinks and blues, yellow and even pastel green in your bakes. We predicted it last year and Pistachio is the on-trend colour and flavour of 2025, but we’re also seeing growing interest in Matcha, with its many health benefits and beautiful green colour, it makes a great addition to baked offerings.
European Influence
You don’t just have to stick to English classics over Easter! European cakes, from the likes of Germany and France can offer a decadent point of difference, that helps make your offering celebration worthy!
Bundt-style cakes are popular across Europe, and the delicious German Kugelhopf, often known as Sunday Cake could be a great alternative to the classic Hot Cross Bun this year, for something different. Similar to a rich pound cake, this decadent doughy cake combines almonds and raisins, and is a real showstopper. We’ve even seen bakers top theirs with chocolate for a luxurious finish.
