New Year: 2025 Cake Trends

Taking inspiration from trends, whether it’s flavours, colours, or presentation styles can elevate any bake and help you take your creations to the next level. From updating a classic to doing something completely new. As we look towards the New Year, it’s an exciting time for bakers!

Here are our top predictions for 2025 baking trends.

Timeless Classics or Hip New Flavours?

Bring in classic flavours such as pistachio to your bakes in 2025, the flavour and colour is showing no signs of going out of style.  For pure decadence, we’ve seen growing interest in espresso too with Tiramisu-inspired bakes, from brownies to cupcakes that we’re sure consumers will love! We all know that lemon is a timeless flavour, but with the rise of the Sour Power trend[i], why not try introducing something a little different such as Guava or soured plum and cherries? Talking of timeless, ginger and cinnamon continue to be popular spices in bakery, with demand increasing for something a little hotter! Chilli-Chocolate and spice is a hot trend in more ways than one, and there’s plenty of opportunity to add this into your cake offerings!

Instagrammable Decorations

 Vintage-style piping is seeing a comeback, especially for celebration cakes! Adventurous bakers are mixing bright and bold pinks, blues and orange with more pastel tones to style their cakes and bakery products. We’re also seeing more bakers offer dual-themed bakes, especially for birthdays as celebrants enter a new decade – from flirty thirty to nifty fifty! This is an excellent way to get contrast colours onto cakes. The best part – there’s a lot of room for experimentation and to be brave with your bakes.

We’re also expecting heart-shaped cakes to remain popular – from Valentine’s to Galentine’s, birthdays or engagements! Plus, they’re all over social media! Instagrammable-food is an established trend[ii], and there’s no sign of this slowing down with TikTok also influencing trends.

Social-Media Savvy

Speaking of which! As more people use social media as a source of information, bakeries and cafes that showcase their beautiful and wow-factor bakes can help drive awareness of their business and appear on ‘must visit’ checklists, popular with foodies on TikTok.

Convenience is Key

According to research the second-top mission for eating out is to ‘treat’[iii], with consumers buying cakes and sweet treats as part of their routine. This is great news!  But, it’s worth keeping in mind as consumers return to pre-Covid routines, cake offerings that are suitable for on-the-go is important to tick that box of convenience for busy customers.

Health is Wealth

Research has also found that 44% of Food-To-Go consumers would consider themselves “health conscious”[iv].
